# Pasta Sauce
# Ingredients
- 2 red bell peppers
- 1 large yellow onion
- 4 garlic cloves
- 2 big cans of tomatoes (CENTO)
- Salt and Pepper to taste
- Olive Oil
- Basil
- 3 Bay Leaves
If adding beef or turkey:
- 1 lb beef or turkey
- 1 cube beef bouillon
- Oregano
- Salt and Pepper to taste
# Directions
- Cut veggies (no need for finely cut – will be blended)
- Sauté peppers and onion in olive oil until the onion is translucent
- Add the chopped garlic and continue to sauté
- Add the bay leaves
- Add tomatoes and salt/pepper
- Cook for an hour at low-medium heat covered.
- If needed added about 1 tsp of sugar to cut acidity
- Blend with an emulsion blender (remove bay leaves before blending)
- Add basil to taste
If adding meat:
- Saute the meat with bouillon and oregano
- Remove excess liquids
- Add to sauce
