# Pasta Sauce

# Ingredients

  • 2 red bell peppers
  • 1 large yellow onion
  • 4 garlic cloves
  • 2 big cans of tomatoes (CENTO)
  • Salt and Pepper to taste
  • Olive Oil
  • Basil
  • 3 Bay Leaves

If adding beef or turkey:

  • 1 lb beef or turkey
  • 1 cube beef bouillon
  • Oregano
  • Salt and Pepper to taste

# Directions

  1. Cut veggies (no need for finely cut – will be blended)
  2. Sauté peppers and onion in olive oil until the onion is translucent
  3. Add the chopped garlic and continue to sauté
  4. Add the bay leaves
  5. Add tomatoes and salt/pepper
  6. Cook for an hour at low-medium heat covered.
  7. If needed added about 1 tsp of sugar to cut acidity
  8. Blend with an emulsion blender (remove bay leaves before blending)
  9. Add basil to taste

If adding meat:

  1. Saute the meat with bouillon and oregano
  2. Remove excess liquids
  3. Add to sauce
