# Herb Crusted Lamb

# Ingredients

  • 2 racks of lamb
  • 1 bushel of parsley
  • 10 cloves garlic
  • 2 tsp dried rosemary
  • - tsp red-pepper flakes
  • cup olive-oil

# Directions

  1. Mince garlic and chop parsley or use a small food processor
  2. Combine the garlic and parsley with the dried rosemary and the red-pepper flakes, then stir in olive oil
  3. Coat the lamb with the mixture and let "marinate" for at least 1 hour in the fridge, 3 or more hours if preferable
  4. Heat oven to 450° F and place sheet-pan fat side up
  5. Cook for approximately 20min. Check temperature chart.
