Herb Crusted Lamb
Ingredients
- 2 racks of lamb
- 1 bushel of parsley
- 10 cloves garlic
- 2 tsp dried rosemary
- - tsp red-pepper flakes
- cup olive-oil
Directions
- Mince garlic and chop parsley or use a small food processor
- Combine the garlic and parsley with the dried rosemary and the red-pepper flakes, then stir in olive oil
- Coat the lamb with the mixture and let "marinate" for at least 1 hour in the fridge, 3 or more hours if preferable
- Heat oven to 450° F and place sheet-pan fat side up
- Cook for approximately 20min. Check temperature chart.
