# Chicken and White Bean Soup
Note: requires instant pot
# Ingredients
- 1 tbsp olive oil
- 1 yellow onion, chopped
- 4 garlic cloves, minced
- 1 tbsp chili powder
- 2 tsp ground cumin
- 5 cups chicken stock
- 1 can (4oz) diced green chiles
- 1 cup greate white or northern beans, rinsed
- 1
lb boneless skinless chicken breast - 2 bay leaves
- 1 cup corn kernels
Optional Toppings:
- avocado
- cilantro
- tortilla chips
# Directions
- Saute onion until translucent
- Add garlic and cook until fragrant ~1 min
- Add chili powder, cumin, 1 tsp salt,
tsp pepper and stir to combine - Add stock, canned chiles and their juices, beans, chicken, and bay leaves to the pot. Lock the lid and pressure cook on high for 30 min, then let release naturally for ~15 min
- Release any additional pressure, discard bay leaves, add corn
- Take chicken out to shred and re-add to soup
- Serve and top with avocado, cilantro, and tortilla chips if desired
