# Carrot Ginger Dressing

makes ~1 cups

# Ingredients

  • cup extra-virgin Olive Oil
  • cup Rice Vinegar
  • 2 large carrots, peeled and roughly chopped
  • 2 tbsp ginger, peeled and roughly chopped
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 1 tsp toasted sesame oil
  • tsp salt, add more if necessary

# Directions

  1. Add all ingredients into blender and blend until desired consistency. If too sour, add more honey.
  2. Store in refrigerator for 1-2 weeks
