# Carne Mechada

# Ingredients

  • 1 red bell pepper
  • 1 green bell pepper
  • 1 large yellow onion
  • 4 garlic cloves
  • 1 can of diced tomatoes
  • 3 bay leaves
  • Salt and Pepper to taste
  • Skirt steak
  • Cooking oil of choice

# Directions

  1. Cook skirt steak in a pressure cooker or an InstantPot with a cup of water and a bouillon cube or desired stock, salt and pepper, and any other veggies to flavor the meat
  2. Shred the meat once it has finished cooking and save the stock
  3. In an oiled pan, saute the peppers and onion until the onion becomes translucent
  4. Add the garlic and continue sautéing until the garlic is incorporated and then add the bay leaves
  5. Add the tomatoes and salt, and pepper
  6. Add the shredded meat to pan and cover with stock
  7. Let the meat absorb the flavors in the pan for at least an hour
