Carne Mechada
Ingredients
- 1 red bell pepper
- 1 green bell pepper
- 1 large yellow onion
- 4 garlic cloves
- 1 can of diced tomatoes
- 3 bay leaves
- Salt and Pepper to taste
- Skirt steak
- Cooking oil of choice
Directions
- Cook skirt steak in a pressure cooker or an InstantPot with a cup of water and a bouillon cube or desired stock, salt and pepper, and any other veggies to flavor the meat
- Shred the meat once it has finished cooking and save the stock
- In an oiled pan, saute the peppers and onion until the onion becomes translucent
- Add the garlic and continue sautéing until the garlic is incorporated and then add the bay leaves
- Add the tomatoes and salt, and pepper
- Add the shredded meat to pan and cover with stock
- Let the meat absorb the flavors in the pan for at least an hour
