# Butter Chicken

Note: Requires InstantPot

# Ingredients

  • 14 oz Canned Tomatoes
  • 5-6 cloves Garlic
  • 1-2 tsp Minced Ginger
  • 1 tsp Turmeric
  • tsp Cayenne
  • 1 tsp Smoked Paprika
  • 1 tsp Salt
  • 1 tsp Garam Masala
  • 1 tsp Ground Cumin
  • 1 pound Boneless Skinless Chicken Thighs *can be frozen*
  • 4 oz Butter or Coconut Oil cut into cubes
  • 4 oz Heavy Cream or Coconut Milk
  • - cup chopped Cilantro

# Directions

  1. Place all ingredients into Instant pot EXCEPT the butter, cream, garam masala, and cilantro. Mix well before putting in the chicken
  2. Close and set cooker for high pressure for 10 min if thawed or for 16 min if frozen. Let pressure release naturally for 10 min. Then, release all pressure and open
  3. Remove Chicken and Set aside
  4. Blend all ingredients left in the pot together with a hand blender
  5. Add the butter, cream, garam masala, and cilantro and stir until well incorporated
  6. Add chicken back into sauce
  7. Serve with rice or however desired
